White Chocolate Cheesecake Brownies

I don't mean to brag, but I just ate an extra marshmallowy bowl of Marshmallow Mateys for dinner.

And by a bowl, I mean a box.

And by Marshmallow Matey's, I do not mean Lucky Charms. Seriously? I'm not even going to defend that.

Some of you might think that when a bowl of Matey's has just taken over your life, you lose interest in other delicious dessert booty such as cheesecake brownies. But you are dead wrong.

Matey's or no Matey's, fudgy brownies packed with chocolate chips and swirled with a layer of sweet, mild, white chocolate cheesecake will win me over every time. Be still my heart, be still.

White Chocolate Cheesecake Brownies

These white chocolate cheesecake brownies are like two desserts in one! And it's the easiest recipe ever with just 6 ingredients.


  • 1 batch of your favorite brownie batter (Ghirardelli Double Chocolate makes yet another appearance)
  • 6 ounces cream cheese, softened
  • 1/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • pinch of salt
  • 1/2 cup or more white chocolate chips


  1. Preheat the oven to 325. Prepare your brownies according to directions. Pour into a baking dish (9×9 or comparable).
  2. Beat the softened cream cheese and sugar. Add the egg, vanilla, and salt and mix until soft and creamy. Stir in the white chocolate chips.
  3. Pour the cream cheese mixture over the brownie batter and swirl into the batter with a knife.
  4. Bake for 30-40 minutes or until knife inserted in the middle comes out clean.


I baked mine on the bottom rack for the first 20 or so minutes and moved it to the top for the last 10-15 minutes. This helped the top from browning too much.

    Wow, these look delicious! I’m never very neat when I cut brownies – I just made some last night and we were so hungry that we hacked into them while they were still warm.

    I’m looking forward to Bjork’s income report tomorrow for March. I’ve been on Foodie Blogroll since last November and now I’m debating switching too. Can’t wait to hear what he has to say on the matter! 🙂

    Cream cheese brownies are already magical but then you went and added white chocolate. I love white chocolate! I want to try a whole grain version. I just need an occasion to make these because brownies and I don’t do well together when left alone.

    I usually have to drive 2 1/2 hours to the largest city around here to get the Ghirardelli however I just discovered I could online shop and *gasp ship to Canada! Happy days are here again!! Although I must brag up Costco since their box mix comes in a 4 pack and it’s Triple Chocolate.
    This is my next – go to, late night – recipe! Thanks a bunch 🙂

    I made these for my husband who was whining about not having anything but “healthy” desserts. We’ve eaten all but three in a few hours and that is why we can’t have nice things. No self-control. They were just too good! I’m going to add more chocolate next time. 🙂

    Bah, I always dislike those US “recipes” where you have to use some ready product like brownie batter. Not a fan of those. Might try the recipe using my own favourite brownie dough recipe…
