Spicy Sausage Posole

3 reviews / 5 average

Hi, my name is Lindsay.

I go to food photography classes.

Bowls of food on a wooden surface.

I meet friendly pugs at food photography classes (eeeee!!!).

Pug dog sitting.

I try to use my new photography skills. #oops

Muffins with butter and honey drizzle.

Annnd... I avoid taking pictures of spicy sausage posole by posting photos of other more interesting things?

Don't be fooled by my bad attitude about soup pictures.

This is actually my favorite fast weeknight soup. It's spicy and yummy and it only takes about 20 minutes to make. Did I mention I love sausage? And cilantro? Cause this soup is loaded with both. BTW, did I mention my closet love of Doritos? I never let an opportunity for Doritos pass me by, and this soup is screaming opportunity.

Spicy Sausage Posole

This 5-ingredient spicy sausage posole is my favorite go-to weeknight meal! Made with pork sausage, hominy, and fire roasted tomatoes.

  • 1 lb. ground pork sausage
  • 1 tablespoon taco seasoning
  • 2 cans (14 oz) fire-roasted tomatoes with garlic
  • 14 oz. water
  • 2 1/2 cups white hominy
  • 1/2 cup packed fresh cilantro
  • sour cream and tortilla chips for topping

  1. Cook the sausage in a large pot with the taco seasoning. Drain well.
  2. Return to pot and add tomatoes, water, and hominy. Simmer for 10-15 minutes.
  3. Add cilantro just before serving. Top with sour cream and tortilla chips!

    1. I want to snorgle that little pug.
    2. I hate photographing soup, too. Somehow it always looks like vomit.
    3. But your soup photograph looks great, very chunky and textured.
    4. I think I have the same charger on which that soup is sitting 🙂 Target??

Food photography classes sound so much fun (especially when they involve a pug…)

This is my kind of soup – chunky and flavourful. Love!

Lindsay–I saw a shirt at Urban yesterday that reminded me of your love for pugs! (Pugs Not Drugs) 🙂

Photography class sounds amazing! So awesome–how’d you find it?

That shirt is going on my Christmas wishlist!! And as for the class, actually, someone emailed me the information about it because they thought I might be interested! And I was! 🙂

Your photography class looks awesome. But I gotta say that soup looks pretty delicious 😀 All the ingredients sound delicious too and I’m all for quick soups that I can make at the last minute 🙂

lol… I try not to use “lol” too much but I think your comment warrants its use.

Ok, I really could use said food photography classes. You, on the other hand need no such thing. Your photography is amazing! Could you send her my way for a week or two? And tell her to bring along a bowl of that soup while she’s at it. 🙂

Aw, thanks! I learned a lot – I’m hoping I can share some tips as I get better! But at this point, I’m still learning….

That soup looks awesome – how you made it look that way is beyond me! I agree that soup pretty much always looks awful in photographs! You did a great job with that one. And can I tell you? I love Doritos too. . . . We don’t really have to keep that a secret, do we? And what’s the hold up with the pug anyway?? Someone needs to get you one, STAT!

  7. Skillful Cook Logo

I would be thrilled if my soup looked as great as yours!! All your photos are amazing 🙂 And that soup looks de-e-licious. The pug is quite adorable as well 🙂

Thanks! Pugs are great, aren’t they? You’ll have to let me know if you end up getting one!

I would like to take a food photography class someday…in the meantime I think I share your frustration with taking pictures of soup (purees…anything like that is tough). Your pics are great though.

I’ve been meaning to make posole more often in the meantime, especially now that it’s almost (wha???!) December. This looks great! And the magic words–“Great weeknight meal”? Sold!
