{No Bake} Dark Chocolate Snickers Cookies

9 reviews / 5 average
Snickers cookies stacked on each other on a plate.

Me, six girls, and a bucket full of chocolate.

This was my math lesson today.

Actually, if I would have remembered the Fraction Pancakes fiasco, I would have skipped the lesson altogether and saved these chocolate bites of heaven for my personal kitchen alone. My brain hates that memory.

But I'm glad I didn't remember, because today was fun.

I cannot keep my face more than one inch away from these dark, sweet, sticky, peanutty snickers cookies.

And there's only one left.

Eating. Now.

{No Bake} Dark Chocolate Snickers Cookies

Description

These no-bake Snickers cookies are so easy to make! This is the most requested recipe that I get from the girls in my class. They love it!

Ingredients

Units Scale
  • 1 3/4 cup sugar
  • 1/2 cup milk
  • 1/2 cup unsalted butter
  • 1/4 cup dark cocoa powder
  • 1/2 cup crunchy peanut butter
  • 2 1/2 cups uncooked quick oats
  • 1 teaspoon vanilla
  • 2-3 Snickers bars, chopped into small bite-sized pieces

Instructions

  1. Place oats and peanut butter in a large mixing bowl. Set aside.
  2. In a large saucepan, melt sugar, milk, butter, and dark cocoa powder, stirring constantly. Bring to a boil and let mixture boil for 1 1/2 minutes (start timing when the rolling boiling starts).
  3. Remove from heat and transfer to the oats bowl. Add vanilla and mix well. Add the Snickers last and stir until mixed in. If the mixture needs a little more to hold together, add about 1/4 cup more oats.
  4. Drop by spoonfuls onto waxed paper and shape with a round cookie cutter or the back of the spoon.

Aww, that must have been a fun thing to do with the girls! They look delicious and love that they’re no bake! The cookies, not the girls. It’s kind of cool over here but I’ve been feeling a little lazy with the baking lazy so I’m all for non-bake things.

These girls look they’re having a great time with those no-bakes! I wish my lessons at school had involved cookies. 🙂 I’m very anti-oven right now, so these are totally perfecto.

Looks yummy & fun. Here in Florida, we are gearing up for a tropical storm due to hit who knows where sometime Monday.

Thee cookies look great. I have never made no-bake cookies before for some reason. The weather here in the mountains of West Virginia is cool and sunny. Have had the air off and the windows open for more than a week now. Sorry. 🙁

OMG OMGOMGOGJMGOGMOG! 🙂 Lindsay I’m kinda sorta obsessing over these. What a FUN time (un)baking cookies together. And they look and sound out of this world. Snickers are just me FAVE. I’m baking with them this weekend and you just made me 1000x more excited 🙂

Omg they look sooo good! Last fall I made some bars close to this but kept them in bar form b/c I didnt know if they’d hold as cookies. Clearly these trump those – because hello, Snickers! Awesome!

Oooh. I’ve made the regular no bake oatmeal chocolate cookies and they’re fabulous. So that means these can only be so much better. Gotta try this soon!

I just found your blog today and have already made some healthy dark chocolate chip peanut butter cookies (with chick peas!). YUM! I’m having a hard time only eating 4 of them and saving some for they hubby and later…but that aside, your information has really made me consider starting a blog. Thanks for the info! (and recipes!) 🙂

“Me, six girls, and a bucket full of chocolate”. What more is there really to say? Great pics, Lindsay, and those girls are such a Happy Thought in the making with those smiling faces! Great post and recipe — thanks for sharing!

I may have already eaten about 4 of these. Delicious. Love the addition of Snickers!

Ha ha! The fraction pancakes were a life lesson! Six girls might be a bit easier to handle than 24 kids… Don’t forget G.H., for example.
Paul and I went to the fair today. The footlong hotdog smothered in onions was delicious. We also went to the St. Paul farmers market this morning… Tomorrow I make a giant batch of gazpacho with almost all market ingredients. Yum. Time to start eating consistently healthy for the new school year.

As school starts officially Monday, I really miss you…on lots of levels.
