Crab & Avocado Nachos

3 reviews / 4 average

I don't mean to be bossy or anything, but...

You must.

You must fill your mouth with cool freshness of avocado, fire-roasted corn, and sweet crab meat blanketed under melted white cheddar, chives, and bacon. No, seriously. BAY-CON.

And you need to send this into your soul riding on a blue corn tortilla chip.

I'm putting on my #bossypants for the joy of your tastebuds. So obey. Please.

Crab avocado nacho photos side-by-side.

The day these crab and avocado nachos were born, I had Superbowl on the mind.

Who's in the Superbowl again?

My Superbowl knowledge consists of overeating (hi, chili cheese dip), a Doritos commercial involving a pug, and a wardrobe malfunction with Janet Jackson's top. Was that like, last year?

I've eaten so many platefuls of these nachos that I might be having a wardrobe malfunction myself. That's a buttononthejeans malfunction if you know whatta mean.

But back to bossing you around.

Crab & Avocado Nachos

These crab avocado nachos are perfect for all cheesy blue corn chip nacho lovers! If you also love crab meat. Which I do.

  • 1 teaspoon butter
  • 1 teaspoon oil
  • 1 can white and yellow sweet corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 lb. jumbo lump crab meat
  • 1/2 cup sour cream
  • 1/4 cup chopped chives
  • tortilla chips
  • 1/2 cup shredded cheese (I used white cheddar)
  • 1 avocado, sliced or cut into chunks
  • 1 slice bacon, chopped or crumbled

  1. Preheat oven to 450 degrees. Melt the butter and oil in a small skillet over medium high heat. Add corn and spices. Let cook, stirring only a few times, until the corn turns golden brown on the outside.
  2. Add crab meat, sour cream, and half of the chives (reserve other half for topping). Mix everything together in the skillet and keep over low heat for 3-4 minutes, to heat through.
  3. Assemble one layer of chips on a baking sheet covered with aluminum foil. Spoon half of the crab mixture and half of the shredded cheese on top of the chips. Top with another layer of chips, the rest of the crab mixture and the rest of the cheese. Broil for 3-5 minutes.
  4. Remove from oven and sprinkle with chives, bacon, and avocado pieces.

That’s about the extent of my superbowl knowledge too. Emphasis on the over-eating part. I’ve seen so many delicious looking recipes with lump crab meat recently I think you’re all trying to make me go broke!

We don’t watch the Super Bowl and I’ve never attended a Super Bowl party, but I’m down with using the day as an excuse to stuff my face. These nachos look like something I need to make immediately. Bring on Super Bowl Sunday!

I heard on the radio today that the Superbowl is the #2 eating day in America. At first I was floored… and then I realized that they were talking about people like myself!

I seriously considered making crab cakes with my crab meat… Nachos won in the end, but now I’m stuck on crab cakes for my next crab adventure. 🙂

Allergic to crab? Other shellfish, too? Major bummer! But at least you can still have the avocadoohhhhh. 🙂

How pretty are these! I love the chips you used, the contrast in colors is awesome, by the way 😀 And they sound absolutely delicious. I haven’t had crab in ages, now I’m craving it like crazy!

I was totally blown away when I saw all those colors coming out of the oven! The chips turned a weird pinky color on the edges which actually looked awesome. 🙂 They were fun to eat!

Lindsay, these are my kind of nachos. And I don’t have dinner planned tonight. But you know what I do have? All the ingredients for these. I think I know what I’m having now. YUM!

I never thought to add crab in my nachos but now I can’t wait to make these! And I’m sure it’ll go so well with the avocado. It’s going to be a happy marriage between the two.

    Well done!
