I extend all my breakfast sandwich love to any variations of this creation. English muffins. Pepperjack Cheese. Gouda cheese. Roasted red peppers. Magic Green Sauce. Fried eggs with a runny yolk.

Let's Assemble Those Croissant Breakfast Sandwiches

Making these sandwiches could not be easier! Here's what you're going to do.

  1. Get your croissants nice and golden with a quick pop in the oven for a minute.
  2. Cook up your eggs in a skillet over medium-low heat until they're perfectly soft. Gently swipe your spatula across the pan when the edges of the eggs start to create soft curds. Watch these closely so that you don't overcook them.
  3. Build your breakfast sammie! Pile high some crispy bacon, tangy garlic butter sauce, guacamole (obviously), and a slice of pepperjack cheese. To keep it a bit more mild, you could also use a slice of cheddar cheese instead. Holy moly! You're about to be in actual breakfast heaven with this.

How To Make Eggs For a Breakfast Sandwich

👆🏼 The essential is obviously the soft scramble, which we talked about at length earlier this week. This is no McD's breakfast sandwich (although, to be fair, I have been known to eat and love a Sausage Biscuit with Egg in moments of weakness). But no, there are no perfectly formed egg disk here.

We're talking about super creamy, gently cooked, soft scrambled eggs. Life changing.

If scrambled eggs aren't your thing, you have options. You could make eggs on a sheet pan for a crowd. Cook your eggs fried or sunny side up. Poach it. Your choice!

Breakfast Sandwich Variations To Try

Though we really love these breakfast sammies with bacon, garlic butter sauce, guac, and cheese, it's really a choose-your-own adventure here and there are endless combos that would work well and be very, very delicious! Maybe you want to try a waffle or a tortilla wrap instead of a croissant? Love it! Those waffle nooks and crannies are perfect for holding your sammie components. Perhaps a layer of crispy fried hashbrowns or potatoes tucked in there? That's a yes from us! Did we hear someone say a little pickled onion topping for tang or hot sauce or some heat? Can I use a different kind of bread for this sandwich?

I mean, you could... but also a buttery toasted croissant here is just TOO GOOD. An English muffin would work great here in a pinch as well.

What other sauces could I use?

Magic Green Sauce would also be a REAL WIN here. Salsa. Your favorite hot sauce. Whatever you like to top on your eggs.

What could I serve this with for brunch?

A delicious simple arugula or mixed greens salad with vinaigrette would be great here. Also: fruit, juice and/or mimosas, pastries of some kind, and (obviously) lots of coffee.

How could I make this vegetarian?

Just omit the bacon! Maybe even replace with roasted mushrooms!? Yum.

The Ultimate Breakfast Sandwich with eggs, bacon, guacamole, chunky tomato sauce, pepper jack cheese, all on a toasted croissant. Kinda spicy. Kinda buttery. Kinda crunchy. Totally over the top.




  1. Toast your croissants for a few minutes in a 350 degree oven, cut side down on a cooking sheet. You can also do this in the toaster if your croissants fit in there.
  2. When croissants are toasted and all other ingredients are out and ready, cook up your eggs. SOFT SCRAMBLED, remember?
  3. Assemble sandwiches immediately, while eggs are at their best - a layer of tomato sauce, eggs, cheese, bacon, and guac on top. Holy wow.

    I have been following your food blog for a little while; your lentil curry recipe is among my favorites.

    This said, may I suggest you drop the words, “Epic” and “Ultimate” from your recipe titles? Firstly, both terms are terribly over- and improperly used to the point of meaningless. Secondly, if I ate this “Ultimate” Breakfast Sandwich as prepared, I would end up hospitalized with anaphylactic shock from the scrambled eggs, to which I am allergic. That might be “epic,” but not in a good way. And if I alter the recipe to use tofu or paneer or egg substitute scramble, it would no longer be, “ultimate.” 🙂

It’s been one of those wonderful, beautiful, recharging mornings with crisp fall air, golden sunshine and a hint of color in the green leaves outside. Reading your new recipe led to a recipe for eggplant red pepper soup at the bottom of the page that looks great if you were to turn this sandwich into brunch, which led to pumpkin bars with caramel frosting I think, which eventually led to chicken alfredo pizza and learning that you guys taught kids in the Philippines for a year and cute photos of the kids who seem somehow heroic when you describe them.     It can sometimes be an uphill battle to figure out creative ways to make healthy breakfast meals. The cheapest and painless method of making a healthy breakfast is one could put together a quick tuna salad with light mayonnaise and spicy mustard with sliced celery and tomatoes. Or they could put tomatoes on the side soaked in apple cider vinegar with the mother by Bragg nutrition and slice up some raw garlic too consumed with sliced tomatoes. And if one really wants to get instant with their healthy breakfasts objectives, they could make a bowl of Wheaties cereal with almond milk and call it a day. LOL

    This post reminds me of the good days back in downtown Brooklyn, when Mom would buy me hot Pastrami and cheese sandwiches from the bodega store on Fulton Street ear Flatbush Avenue. A good New York Pastrami sandwich with fresh cut Board Head Pastrami on NY hero bread always satisfied your gut and left you smiling and sleepy afterwards. 🙂
